About NFS 3283 A
This course addresses the development of a HACCP plan. Requirements of both the USDA-FSIS and FDA are examined. A mock HACCP plan will be developed. Prerequisites: NFS 3203 and Instructor permission.

Section Description
This course is an in depth discussion of food processing with relation to the development of a safe product.
Section Expectation
Students are expected to be in class everyday and to be actively involved in the discussions which occur everyday. Students will be expected to apply knowledge learned in other courses to problem solve situations that may arise in a processing plant.
Evaluation
Evaluation is based on active participation in the classroom discussions, attendance, the production of a complete HACCP (Food Safety Plan) for a food product of their choice. The complete project will include all pre-requisite programs as well as a complete flow diagram and hazard analyis.
