Section Description

The goal of NFS 43 is to develop a basic understanding of the science of nutrition. My aim is for you to develop an ability to discern between the truth and fiction about nutrition, to ask insightful questions and to find the answers. My expectation is that you will gain the knowledge and skills needed to achieve a nutritionally healthy lifestyle.

Section Expectation

Upon successful completion of this course, you will be able to: 1. Discuss and identify the functions of the essential nutrients needed to sustain human life. 2. Use the standard guidelines to select foods that help maximize people’s health and fitness. 3. Assess and synthesize your personal nutrition needs via completion of a comprehensive dietary assessment.

Evaluation

The gradable course components include: online course discussion, weekly knowledge checks, reading reflection, three exams and a final dietary assessment project.
